Sausage, Gnocchi and Cherry Tomato Tray Bake

Shop-bought gnocchi crisps up like little roast potatoes beside burst tomatoes and browned sausage. Ten minutes of chopping and the oven does the rest.
Ingredients
- 6 piece thick pork sausages
- 500 gram potato gnocchi
- 400 gram cherry tomatoes
- 2 piece zucchini
- 3 clove garlic
- 3 tablespoon olive oil
- 2 teaspoon dried italian herbs
- 60 gram baby spinach
- 40 gram parmesan
Instructions
- 1Heat the oven to 220°C and cut each sausage into four chunks.
- 2Tip the gnocchi, sausage chunks, thick zucchini slices, tomatoes and crushed garlic onto a large oven tray.
- 3Pour over the oil and herbs and toss until the gnocchi look shiny.
- 4Roast for 20 minutes, until the sausage is browned on top.
- 5Stir everything once with a spatula and roast for another 15 minutes, until the gnocchi are crisp and the tomatoes have burst.
- 6Stir the spinach through the hot tray so it wilts, then grate over the parmesan.
