Lemon Delicious Pudding

A light, old-fashioned baked pudding that separates into a fluffy lemon sponge over a tangy custard layer. Bright, comforting and worth the whisking.

Ingredients

  • 60 gram butter, softened
  • 3/4 cup caster sugar
  • 1 tablespoon lemon zest, finely grated
  • 3 piece eggs, separated
  • 1/4 cup self-raising flour
  • 250 millilitre milk
  • 80 millilitre lemon juice
  • 1 tablespoon icing sugar, for dusting

Instructions

  1. 1Preheat the oven to 170°C. Grease a 6-cup (1.5 litre) baking dish and boil a full kettle.
  2. 2Beat the butter, caster sugar and lemon zest with electric beaters until pale and creamy.
  3. 3Beat in the egg yolks one at a time.
  4. 4Fold in the flour, then stir in the milk and lemon juice. The mixture will look thin and slightly curdled — that is normal.
  5. 5In a clean bowl, whisk the egg whites to soft peaks.
  6. 6Gently fold the egg whites into the lemon mixture in two batches, then pour into the dish.
  7. 7Sit the dish in a roasting pan and pour boiling water into the pan until it comes halfway up the sides of the dish.
  8. 8Bake for 45 minutes, until the top is golden and set but still wobbly underneath.
  9. 9Dust with icing sugar and serve warm, scooping down to get sponge and sauce in every serve.
