Lemon Delicious Pudding

A light, old-fashioned baked pudding that separates into a fluffy lemon sponge over a tangy custard layer. Bright, comforting and worth the whisking.
Ingredients
- 60 gram butter, softened
- 3/4 cup caster sugar
- 1 tablespoon lemon zest, finely grated
- 3 piece eggs, separated
- 1/4 cup self-raising flour
- 250 millilitre milk
- 80 millilitre lemon juice
- 1 tablespoon icing sugar, for dusting
Instructions
- 1Preheat the oven to 170°C. Grease a 6-cup (1.5 litre) baking dish and boil a full kettle.
- 2Beat the butter, caster sugar and lemon zest with electric beaters until pale and creamy.
- 3Beat in the egg yolks one at a time.
- 4Fold in the flour, then stir in the milk and lemon juice. The mixture will look thin and slightly curdled — that is normal.
- 5In a clean bowl, whisk the egg whites to soft peaks.
- 6Gently fold the egg whites into the lemon mixture in two batches, then pour into the dish.
- 7Sit the dish in a roasting pan and pour boiling water into the pan until it comes halfway up the sides of the dish.
- 8Bake for 45 minutes, until the top is golden and set but still wobbly underneath.
- 9Dust with icing sugar and serve warm, scooping down to get sponge and sauce in every serve.
