Pan-Fried Fish With Potato and Corn Hash

A golden potato and corn hash cooks first, then the fish fillets fry alongside it in the same pan. Ready in well under 40 minutes with one thing to scrub.

Ingredients

  • 600 gram white fish fillets
  • 700 gram chat potatoes
  • 1 cup frozen corn
  • 1 piece red capsicum
  • 4 piece spring onion
  • 1 teaspoon smoked paprika
  • 3 tablespoon olive oil
  • 1 piece lemon
  • 80 gram baby spinach

Instructions

  1. 1Cut the potatoes into 1.5cm cubes and dice the capsicum.
  2. 2Heat 2 tablespoons of oil in a large frying pan over medium heat and fry the potatoes for 12 minutes, turning every few minutes, until crusty and tender.
  3. 3Add the capsicum, corn and paprika and fry for 4 minutes, until the corn starts to pop and colour.
  4. 4Push the hash to one side of the pan and add the remaining oil to the empty half.
  5. 5Lay the seasoned fish in the clear space and cook for 3 minutes each side, until the flesh turns opaque and flakes.
  6. 6Stir the spinach and spring onion through the hash until wilted, then squeeze the lemon over the pan.
