Sesame Ginger Cucumber Salad

Cool cucumber ribbons in a sesame, soy and ginger dressing. A refreshing sidekick for rice dishes, dumplings or grilled chicken.

Ingredients

  • 4 piece lebanese cucumbers
  • 1 tablespoon soy sauce
  • 1 tablespoon rice wine vinegar
  • 2 teaspoon sesame oil
  • 1 teaspoon fresh ginger
  • 1 teaspoon sugar
  • 1 tablespoon sesame seeds

Instructions

  1. 1Slice the cucumbers into thin rounds and put them in a bowl.
  2. 2Finely grate the ginger.
  3. 3Whisk the soy sauce, vinegar, sesame oil, ginger and sugar in a small bowl.
  4. 4Pour the dressing over the cucumber and toss.
  5. 5Chill for 10 minutes if you have time, then sprinkle with sesame seeds and serve.
