Cool cucumber ribbons in a sesame, soy and ginger dressing. A refreshing sidekick for rice dishes, dumplings or grilled chicken.
Ingredients
- 4 piece lebanese cucumbers
- 1 tablespoon soy sauce
- 1 tablespoon rice wine vinegar
- 2 teaspoon sesame oil
- 1 teaspoon fresh ginger
- 1 teaspoon sugar
- 1 tablespoon sesame seeds
Instructions
- 1Slice the cucumbers into thin rounds and put them in a bowl.
- 2Finely grate the ginger.
- 3Whisk the soy sauce, vinegar, sesame oil, ginger and sugar in a small bowl.
- 4Pour the dressing over the cucumber and toss.
- 5Chill for 10 minutes if you have time, then sprinkle with sesame seeds and serve.
