Cheesy Pork Meatball and Orzo Tray

Pork meatballs and orzo cook together in seasoned stock until the pasta is plump and the top is bubbling with cheese. Nothing else to boil, nothing else to drain.
Ingredients
- 500 gram pork mince
- 250 gram orzo pasta
- 1 tin crushed tomatoes
- 600 millilitre chicken stock
- 2 piece zucchini
- 3 clove garlic
- 2 teaspoon dried oregano
- 1 cup grated mozzarella
- 1 tablespoon olive oil
Instructions
- 1Heat the oven to 200°C and roll the pork mince into 20 small meatballs with the crushed garlic and 1 teaspoon oregano.
- 2Sit the meatballs in a deep oven tray, drizzle with the oil and roast for 12 minutes, until browned on top.
- 3Pour the orzo, tomatoes, stock, diced zucchini and remaining oregano straight into the tray around the meatballs.
- 4Cover the tray tightly with foil and bake for 20 minutes.
- 5Lift the foil and check the orzo is soft with only a little liquid left, then stir once.
- 6Scatter over the mozzarella and bake uncovered for 8 minutes, until melted and patchy gold.
