Orange and Poppy Seed Dressing

Sweet citrus flecked with poppy seeds — a mild, sunny dressing kids will happily eat. Try it over spinach, beetroot and orange segments.
Ingredients
- 1 piece orange
- 2 tablespoon white wine vinegar
- 1 tablespoon honey
- 1 teaspoon dijon mustard
- 2 teaspoon poppy seeds
- 125 millilitre olive oil
- 1/2 teaspoon salt
Instructions
- 1Finely grate the zest of the orange into a screw-top jar, then squeeze in 60 millilitres of its juice.
- 2Add the vinegar, honey, dijon and salt, then shake until smooth.
- 3Pour in the olive oil and shake hard for 30 seconds.
- 4Add the poppy seeds last and give the jar a gentle swirl so they stay suspended rather than sinking.
- 5Taste and sharpen with another splash of vinegar if the orange was a very sweet one.
- 6Keeps in the fridge for 1 week.
