Black Bean Quesadillas

Crispy golden tortillas stuffed with smashed black beans, corn and melty cheese. Cut into wedges and serve with whatever dippers you fancy.
Ingredients
- 2 tin black beans
- 4 piece large flour tortillas
- 2 cup tasty cheese, grated
- 1 tin corn kernels
- 3 piece spring onion
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 tablespoon olive oil
- 1/2 cup sour cream, to serve
- 1/2 cup mild salsa, to serve
Instructions
- 1Drain and rinse the beans and corn. Slice the spring onions.
- 2Roughly mash the beans in a bowl with the cumin, paprika and a pinch of salt. Stir in the corn and spring onion.
- 3Spread a quarter of the bean mix over half of each tortilla. Top with half a cup of cheese and fold the tortilla over.
- 4Brush a large frying pan with a little oil and set over medium heat.
- 5Cook one quesadilla for 3 minutes until golden underneath, flip carefully, and cook 3 minutes more until the cheese melts.
- 6Repeat with the remaining quesadillas, keeping cooked ones warm under a clean tea towel.
- 7Cut into wedges and serve with sour cream and salsa for dipping.
