Ingredients

  • 2 tin black beans
  • 4 piece large flour tortillas
  • 2 cup tasty cheese, grated
  • 1 tin corn kernels

  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 1/2 cup sour cream, to serve
  • 1/2 cup mild salsa, to serve

Instructions

  1. 1Drain and rinse the beans and corn. Slice the spring onions.
  2. 2Roughly mash the beans in a bowl with the cumin, paprika and a pinch of salt. Stir in the corn and spring onion.
  3. 3Spread a quarter of the bean mix over half of each tortilla. Top with half a cup of cheese and fold the tortilla over.
  4. 4Brush a large frying pan with a little oil and set over medium heat.

  7. 7Cut into wedges and serve with sour cream and salsa for dipping.
