Sesame Noodle Salad Jars

Chilled noodles with crunchy veg and a nutty-tasting sesame soy dressing, layered in jars for grab-and-go lunches all week.

Ingredients

  • 270 gram dried egg noodles
  • 1 piece carrot, cut into thin strips
  • 1 piece red capsicum, thinly sliced
  • 1 cup snow peas, sliced
  • 2 piece spring onions, sliced
  • 3 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 2 teaspoon honey
  • 2 teaspoon sesame seeds

Instructions

  1. 1Cook the noodles in boiling water for 4 minutes, then drain and rinse under cold water.
  2. 2Whisk the soy sauce, sesame oil, vinegar and honey in a small jug.
  3. 3Pour the dressing into the bottom of 4 large jars.
  4. 4Layer in the carrot, capsicum and snow peas, then top with the noodles.
  5. 5Finish with spring onions and sesame seeds, then seal.
  6. 6Refrigerate for up to 3 days. Shake well and tip into a bowl to eat.
