Sesame Noodle Salad Jars

Chilled noodles with crunchy veg and a nutty-tasting sesame soy dressing, layered in jars for grab-and-go lunches all week.
Ingredients
- 270 gram dried egg noodles
- 1 piece carrot, cut into thin strips
- 1 piece red capsicum, thinly sliced
- 1 cup snow peas, sliced
- 2 piece spring onions, sliced
- 3 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 2 teaspoon honey
- 2 teaspoon sesame seeds
Instructions
- 1Cook the noodles in boiling water for 4 minutes, then drain and rinse under cold water.
- 2Whisk the soy sauce, sesame oil, vinegar and honey in a small jug.
- 3Pour the dressing into the bottom of 4 large jars.
- 4Layer in the carrot, capsicum and snow peas, then top with the noodles.
- 5Finish with spring onions and sesame seeds, then seal.
- 6Refrigerate for up to 3 days. Shake well and tip into a bowl to eat.
