Choc Oat Energy Balls

Rich chocolatey energy balls made with oats, dates and cocoa — no nuts in sight. A little sweet hit that is safe for the school bag. Needs 30 minutes chilling to firm up.

Ingredients

  • 250 gram pitted dates
  • 1 cup rolled oats
  • 2 tablespoon cocoa powder
  • 1/2 cup desiccated coconut
  • 1 tablespoon coconut oil, melted
  • 2 tablespoon boiling water

Instructions

  1. 1Soak the dates in the boiling water for 5 minutes to soften.
  2. 2Blitz the dates and soaking water in a food processor until a paste forms.
  3. 3Add the oats, cocoa, half the coconut and the coconut oil. Blitz until the mix clumps together.
  4. 4Roll tablespoons of the mixture into balls with damp hands.
  5. 5Roll the balls in the remaining coconut and chill for 30 minutes before eating.
