Choc Oat Energy Balls

Rich chocolatey energy balls made with oats, dates and cocoa — no nuts in sight. A little sweet hit that is safe for the school bag. Needs 30 minutes chilling to firm up.
Ingredients
- 250 gram pitted dates
- 1 cup rolled oats
- 2 tablespoon cocoa powder
- 1/2 cup desiccated coconut
- 1 tablespoon coconut oil, melted
- 2 tablespoon boiling water
Instructions
- 1Soak the dates in the boiling water for 5 minutes to soften.
- 2Blitz the dates and soaking water in a food processor until a paste forms.
- 3Add the oats, cocoa, half the coconut and the coconut oil. Blitz until the mix clumps together.
- 4Roll tablespoons of the mixture into balls with damp hands.
- 5Roll the balls in the remaining coconut and chill for 30 minutes before eating.
