Bush Damper Mix Jar

A pantry jar of damper mix that turns into a crusty golden loaf with water and a knob of butter. Ideal for camping trips or a cosy soup night.

Ingredients

  • 600 gram self-raising flour
  • 60 gram full cream milk powder
  • 1 tablespoon caster sugar
  • 1 teaspoon baking powder
  • 2 teaspoon salt

Instructions

  1. 1Sift the self-raising flour and baking powder into a large bowl.
  2. 2Whisk through the milk powder, caster sugar and salt.
  3. 3Spoon into a 1.5 litre jar and seal tightly.
  4. 4Label the jar with the date and the to-use directions below.
  5. 5TO USE: rub 30 g cold butter into 330 g of mix, then stir in 200 ml water to make a soft dough. Shape into a round, score a cross on top and bake at 200°C for 30 minutes. Makes 1 damper, serves 6.
  6. 6Store in an airtight jar in a cool dark cupboard for up to 3 months.
