Strawberry Yoghurt Muffins

Tender muffins dotted with fresh strawberries and made extra soft with Greek yoghurt. Perfect for lunchboxes and morning tea alike.
Ingredients
- 2 cup self-raising flour
- 1/2 cup caster sugar
- 250 gram strawberries, hulled and chopped
- 3/4 cup greek yoghurt
- 2 piece eggs
- 80 millilitre vegetable oil
- 1 teaspoon vanilla extract
Instructions
- 1Heat the oven to 180°C and line a 12-hole muffin tin with paper cases.
- 2Stir the flour and sugar together in a large bowl.
- 3Whisk the yoghurt, eggs, oil and vanilla in a jug.
- 4Pour the wet mix into the dry mix and fold until just combined.
- 5Gently fold in the chopped strawberries.
- 6Spoon into the muffin holes and bake for 20 minutes, until a skewer comes out clean.
- 7Cool on a wire rack. Freeze extras in a zip-lock bag for busy weeks.
