Strawberry Yoghurt Muffins

Tender muffins dotted with fresh strawberries and made extra soft with Greek yoghurt. Perfect for lunchboxes and morning tea alike.

Ingredients

  • 2 cup self-raising flour
  • 1/2 cup caster sugar
  • 250 gram strawberries, hulled and chopped
  • 3/4 cup greek yoghurt
  • 2 piece eggs
  • 80 millilitre vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. 1Heat the oven to 180°C and line a 12-hole muffin tin with paper cases.
  2. 2Stir the flour and sugar together in a large bowl.
  3. 3Whisk the yoghurt, eggs, oil and vanilla in a jug.
  4. 4Pour the wet mix into the dry mix and fold until just combined.
  5. 5Gently fold in the chopped strawberries.
  6. 6Spoon into the muffin holes and bake for 20 minutes, until a skewer comes out clean.
  7. 7Cool on a wire rack. Freeze extras in a zip-lock bag for busy weeks.
