Honey and Wholegrain Mustard Vinaigrette

Mustard seeds pop through a sweet cider vinegar base. Especially good over roast pumpkin, potato salad and shaved fennel.
Ingredients
- 2 tablespoon wholegrain mustard
- 1 tablespoon honey
- 60 millilitre apple cider vinegar
- 150 millilitre olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon cracked black pepper
Instructions
- 1Spoon the wholegrain mustard and honey into a screw-top jar.
- 2Add the cider vinegar, salt and pepper, then shake until the honey has dissolved.
- 3Pour in the olive oil and shake hard for 30 seconds.
- 4Let it stand for 5 minutes, then shake once more — the mustard seeds swell and the dressing thickens.
- 5Taste and balance with a splash more vinegar if it leans too sweet.
- 6Keeps in the fridge for 2 weeks.
