Beef Mince Stuffed Capsicums

Halved capsicums filled with savoury beef mince and rice, topped with melted cheese. A whole small meal that cooks entirely in the basket.
Ingredients
- 4 piece red capsicum
- 500 gram beef mince
- 1 cup cooked rice
- 1 tin tinned diced tomatoes
- 1 piece brown onion
- 2 clove garlic
- 2 teaspoon dried oregano
- 80 gram tasty cheese
- 1 teaspoon salt
Instructions
- 1Halve the capsicums lengthways and scoop out the seeds and white ribs.
- 2Finely chop the onion and crush the garlic.
- 3Mix the raw beef mince with the onion, garlic, cooked rice, drained tomatoes, oregano and salt.
- 4Pack the filling firmly into four capsicum halves and sit them in the basket. A 5-6L basket fits four halves, so cook two batches.
- 5Cook at 180°C for 18 minutes without turning them.
- 6Scatter grated cheese over each half and cook at 180°C for a final 6 minutes until melted and bubbling.
- 7Lift out carefully with a spatula and repeat with the remaining halves.
