Mince and Potato Hotpot

A tried and true family favourite hotpot with seasoned beef mince, layered potatoes, mushrooms, and a creamy cheese sauce baked until golden and tender.
Ingredients
- 5 medium potatoes, peeled
- 1 tbs oil
- 500 g beef mince
- 1 onion, finely chopped
- 1 tbs tomato sauce
- 1 tbs Worcestershire sauce
- 1 pinch salt and pepper
- 60 g margarine
- 1/4 cup plain flour
- 2 cups milk
- 1 cup cheese, grated
- 250 g canned mushrooms
- 30 g margarine, extra
Instructions
- 1Preheat oven to 190C. Peel potatoes, cut into thin slices and place in a bowl with water.
- 2Heat oil in frying pan, add mince, onion, sauces, salt and pepper. Brown mince and set aside.
- 3Melt margarine in a saucepan and add flour. Blend until smooth.
- 4Gradually add milk and stir continuously until a thick sauce is made. Reduce heat and stir in cheese. Remove from heat.
- 5Line a casserole dish with half the potato slices, pour in the mince mixture and top with mushrooms.
- 6Pour cheese sauce over mixture and top with remaining potatoes.
- 7Dot casserole with extra margarine and place in oven for 30-40 minutes until browned and potatoes are tender.
