One-Pot Coconut Lime Chickpea Rice

Chickpeas, basmati and a tin of coconut milk cook together into a fragrant, lemony rice pot. Entirely plant-based and made from pantry tins.
Ingredients
- 2 tin tinned chickpeas
- 1.5 cup basmati rice
- 1 tin coconut milk
- 500 millilitre vegetable stock
- 1 teaspoon ground turmeric
- 2 teaspoon minced garlic
- 1 cup frozen green beans
- 2 tablespoon lime juice
- 1 teaspoon salt
Instructions
- 1Drain and rinse the chickpeas, then tip them into a large saucepan with the rice, coconut milk, stock, turmeric, garlic and salt.
- 2Bring it to a bubble over high heat, then put the lid on and turn the heat to low for 15 minutes.
- 3Scatter the frozen beans on top, put the lid back on and leave it off the heat for 7 minutes.
- 4Stir the lime juice through and fluff the rice with a fork.
- 5Cool quickly and keep in the fridge for 2 days, or freeze in flat portions for 2 months. Reheat from frozen in the microwave for 4 minutes with a tablespoon of water added.
