Hearty Lentil Bolognese

A rich tomato and lentil sauce that clings to spaghetti just like the classic. Even dedicated meat-eaters come back for seconds.
Ingredients
- 2 tablespoon olive oil
- 1 piece brown onion, finely diced
- 1 piece carrot, finely diced
- 1 piece celery stalk, finely diced
- 3 clove garlic, crushed
- 2 tin brown lentils, drained
- 2 tin crushed tomatoes
- 2 tablespoon tomato paste
- 2 teaspoon dried oregano
- 400 gram spaghetti
- 1/2 cup basil leaves, to serve
Instructions
- 1Heat the oil in a large saucepan over medium heat and cook the onion, carrot and celery for 8 minutes until soft.
- 2Add the garlic and stir for 1 minute.
- 3Add the lentils, crushed tomatoes, tomato paste and oregano and stir well.
- 4Simmer the sauce uncovered for 20 minutes, stirring now and then, until thick.
- 5Meanwhile, cook the spaghetti in a large pot of salted boiling water according to the packet time, then drain.
- 6Toss the spaghetti through the sauce, loosening with a splash of pasta water if needed.
- 7Season with salt and pepper and serve topped with basil leaves.
