Chunky Vegetable Soup In A Jar

Layers of dried lentils, split peas and barley in one jar, ready to become a thick winter soup. Just tip a cupful into a pot with water and let it bubble away.
Ingredients
- 200 gram red lentils
- 150 gram green split peas
- 100 gram pearl barley
- 50 gram dried vegetable flakes
- 3 tablespoon vegetable stock powder
- 1 tablespoon dried parsley
- 1 teaspoon ground black pepper
Instructions
- 1Tip the red lentils, split peas and pearl barley into a large bowl.
- 2Add the vegetable flakes, stock powder, dried parsley and black pepper.
- 3Stir well so the seasoning is spread right through the pulses.
- 4Pour into a 1 litre jar and label with the date.
- 5TO USE: simmer 1 heaped cup of mix in 1.5 litres water with a 400 g tin of chopped tomatoes for 40 minutes, stirring now and then, until the pulses are soft. Serves 6.
- 6Store in an airtight jar in a cool dark cupboard for up to 9 months.
