Parmesan-Crumbed Fish With Smashed Peas

White fish under a golden parmesan crumb, baked while you smash buttery minted peas. A grown-up fish dinner kids will still demolish.

Ingredients

  • 4 piece firm white fish fillets
  • 3/4 cup panko breadcrumbs
  • 1/2 cup parmesan, grated
  • 50 gram butter, melted
  • 1 piece lemon
  • 500 gram frozen peas
  • 2 tablespoon mint leaves
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt

Instructions

  1. 1Preheat the oven to 200°C and line a baking tray with baking paper.
  2. 2Mix the panko, parmesan, lemon zest and melted butter in a bowl until it looks like damp sand.
  3. 3Place the fish on the tray, season with salt and press the crumb mixture firmly onto the top of each fillet.
  4. 4Bake for 12 minutes until the crumb is golden and the fish flakes easily with a fork.
  5. 5Meanwhile, boil the peas for 3 minutes, then drain.
  6. 6Roughly smash the peas with the olive oil, chopped mint and a pinch of salt using a potato masher or fork.
  7. 7Serve the fish on the smashed peas with lemon wedges.
