Parmesan-Crumbed Fish With Smashed Peas

White fish under a golden parmesan crumb, baked while you smash buttery minted peas. A grown-up fish dinner kids will still demolish.
Ingredients
- 4 piece firm white fish fillets
- 3/4 cup panko breadcrumbs
- 1/2 cup parmesan, grated
- 50 gram butter, melted
- 1 piece lemon
- 500 gram frozen peas
- 2 tablespoon mint leaves
- 1 tablespoon olive oil
- 1/2 teaspoon salt
Instructions
- 1Preheat the oven to 200°C and line a baking tray with baking paper.
- 2Mix the panko, parmesan, lemon zest and melted butter in a bowl until it looks like damp sand.
- 3Place the fish on the tray, season with salt and press the crumb mixture firmly onto the top of each fillet.
- 4Bake for 12 minutes until the crumb is golden and the fish flakes easily with a fork.
- 5Meanwhile, boil the peas for 3 minutes, then drain.
- 6Roughly smash the peas with the olive oil, chopped mint and a pinch of salt using a potato masher or fork.
- 7Serve the fish on the smashed peas with lemon wedges.
