Shakshuka-Style Baked Eggs

Eggs gently poached in a rich, smoky capsicum and tomato sauce. One pan, crusty bread, happy weekend.
Ingredients
- 2 tablespoon olive oil
- 1 piece brown onion
- 1 piece red capsicum
- 2 clove garlic
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 2 tin crushed tomatoes
- 4 piece eggs
- 50 gram feta
- 4 slice crusty bread
Instructions
- 1Dice the onion and capsicum, and crush the garlic.
- 2Heat the oil in a large deep frying pan over medium heat and cook the onion and capsicum for 6 minutes until soft.
- 3Stir in the garlic, paprika and cumin and cook for 1 minute.
- 4Add the tinned tomatoes, season, and simmer for 8 minutes until slightly thickened.
- 5Make four wells in the sauce with a spoon and crack an egg into each.
- 6Cover and cook for 6 to 8 minutes, until the whites are set and the yolks are still soft.
- 7Crumble the feta over the top and serve from the pan with crusty bread.
