Basket Bacon and Egg Cups

Bacon lines little silicone cups and an egg goes in the middle, so breakfast cooks itself while you make the coffee. Great for a slow weekend morning or a make-ahead work week.

Ingredients

  • 8 slice middle bacon rashers
  • 8 piece eggs
  • 40 gram tasty cheese
  • 1 tablespoon chives
  • 1 pinch black pepper

Instructions

  1. 1Line the inside of eight silicone muffin cups with a rasher of bacon each, curling it around the wall.
  2. 2Sit four cups in the air fryer basket and cook at 180°C for 4 minutes to set the bacon. A 5-6L basket fits four cups at a time, so plan on two batches.
  3. 3Crack an egg into each part-cooked bacon cup.
  4. 4Scatter grated cheese over the eggs and cook at 160°C for 9 minutes.
  5. 5Lift the cups out with tongs and repeat with the second batch.
  6. 6Snip chives over the top and add a grind of pepper.
