One-Pot Cheesy Tortellini And Spinach

Fresh tortellini cooks straight in a tomato sauce with baby spinach folded through. One pot, fifteen minutes, no colander.
Ingredients
- 600 gram fresh cheese tortellini
- 700 millilitre tomato passata
- 250 millilitre water
- 2 teaspoon minced garlic
- 2 teaspoon dried italian herbs
- 100 gram baby spinach
- 1/2 cup grated parmesan
- 1 teaspoon salt
Instructions
- 1Tip the tortellini, passata, water, garlic, herbs and salt into a large saucepan.
- 2Bring to a gentle bubble over medium heat and set a timer for 12 minutes, stirring twice.
- 3Turn off the heat, add the spinach and parmesan and stir until the spinach wilts.
- 4Keeps 2 days in the fridge. Freeze the sauce alone for 3 months and cook fresh tortellini in it later; reheat leftovers in the microwave for 2 minutes.
