Cinnamon Apple Hand Pies

Little puff pastry parcels stuffed with cinnamon apple, puffed and flaky from the basket. Best eaten warm with a scoop of vanilla ice cream.
Ingredients
- 2 piece puff pastry sheets
- 3 piece granny smith apples
- 3 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 20 gram butter
- 1 piece egg
- 1 tablespoon caster sugar
Instructions
- 1Peel and finely dice the apples.
- 2Cook the apple with the butter, brown sugar and cinnamon in a small saucepan for 5 minutes until softened, then cool.
- 3Cut each pastry sheet into three rectangles, giving six in total.
- 4Spoon apple onto one half of each rectangle, fold the pastry over and press the edges with a fork to seal.
- 5Brush the tops with beaten egg, sprinkle with caster sugar and cut two small slits in each pie.
- 6Sit three pies in the basket on baking paper and cook at 180°C for 7 minutes. A 5-6L basket fits three pies, so cook two batches.
- 7Turn the pies over and cook at 180°C for another 4 minutes until puffed and golden underneath, then repeat with the rest.
