Cinnamon Apple Hand Pies

Little puff pastry parcels stuffed with cinnamon apple, puffed and flaky from the basket. Best eaten warm with a scoop of vanilla ice cream.

Ingredients

  • 2 piece puff pastry sheets
  • 3 piece granny smith apples
  • 3 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 20 gram butter
  • 1 piece egg
  • 1 tablespoon caster sugar

Instructions

  1. 1Peel and finely dice the apples.
  2. 2Cook the apple with the butter, brown sugar and cinnamon in a small saucepan for 5 minutes until softened, then cool.
  3. 3Cut each pastry sheet into three rectangles, giving six in total.
  4. 4Spoon apple onto one half of each rectangle, fold the pastry over and press the edges with a fork to seal.
  5. 5Brush the tops with beaten egg, sprinkle with caster sugar and cut two small slits in each pie.
  6. 6Sit three pies in the basket on baking paper and cook at 180°C for 7 minutes. A 5-6L basket fits three pies, so cook two batches.
  7. 7Turn the pies over and cook at 180°C for another 4 minutes until puffed and golden underneath, then repeat with the rest.
