Crispy Pork Roast with Crackling

A succulent pork roast with a crispy, golden crackling on top, perfect for a family dinner.

Ingredients

  • 2 kg Pork shoulder
  • 2 tsp Salt
  • 2 tbsp Olive oil
  • 4 cloves Garlic
  • 2 tbsp Rosemary
  • 2 tbsp Thyme

Instructions

  1. 1Preheat the oven to 220°C (430°F). Score the pork skin with a sharp knife in a diamond pattern.
  2. 2Rub the pork shoulder with salt, ensuring it gets into the scored skin. Place the pork in a roasting pan.
  3. 3Drizzle olive oil over the pork and massage it into the skin. Crush the garlic, rosemary, and thyme together and rub the mixture over the pork.
  4. 4Roast the pork in the preheated oven for 30 minutes to crisp up the skin. Then reduce the heat to 180°C (355°F) and continue to roast for about 1.5 hours or until the internal temperature reaches 70°C (160°F).
  5. 5Rest the pork roast for 15 minutes before carving. Slice and serve with your favorite sides.
