Ingredients
- 2 kg Pork shoulder
- 2 tsp Salt
- 2 tbsp Olive oil
- 4 cloves Garlic
- 2 tbsp Rosemary
- 2 tbsp Thyme
Instructions
- 1Preheat the oven to 220°C (430°F). Score the pork skin with a sharp knife in a diamond pattern.
- 2Rub the pork shoulder with salt, ensuring it gets into the scored skin. Place the pork in a roasting pan.
- 3Drizzle olive oil over the pork and massage it into the skin. Crush the garlic, rosemary, and thyme together and rub the mixture over the pork.
- 4Roast the pork in the preheated oven for 30 minutes to crisp up the skin. Then reduce the heat to 180°C (355°F) and continue to roast for about 1.5 hours or until the internal temperature reaches 70°C (160°F).
- 5Rest the pork roast for 15 minutes before carving. Slice and serve with your favorite sides.
