Charred Corn and Capsicum Salad

Sweet corn kernels charred in a hot pan and tossed with red capsicum, coriander and lime. A bright, smoky salad that loves a barbecue.
Ingredients
- 3 piece corn cobs
- 1 piece red capsicum
- 3 piece spring onions
- 1/2 bunch coriander
- 2 tablespoon olive oil
- 1 piece lime
- 1/2 teaspoon salt
Instructions
- 1Slice the kernels off the corn cobs with a sharp knife.
- 2Dice the capsicum and slice the spring onions.
- 3Heat 1 tablespoon of oil in a large frying pan over high heat.
- 4Cook the corn kernels without stirring for 3 minutes so they char, then stir and cook 3 minutes more.
- 5Tip the corn into a bowl and add the capsicum, spring onion and roughly chopped coriander.
- 6Squeeze over the lime juice, add the remaining oil and salt, then toss and serve.
