Charred Corn and Capsicum Salad

Sweet corn kernels charred in a hot pan and tossed with red capsicum, coriander and lime. A bright, smoky salad that loves a barbecue.

Ingredients

  • 3 piece corn cobs
  • 1 piece red capsicum
  • 3 piece spring onions
  • 1/2 bunch coriander
  • 2 tablespoon olive oil
  • 1 piece lime
  • 1/2 teaspoon salt

Instructions

  1. 1Slice the kernels off the corn cobs with a sharp knife.
  2. 2Dice the capsicum and slice the spring onions.
  3. 3Heat 1 tablespoon of oil in a large frying pan over high heat.
  4. 4Cook the corn kernels without stirring for 3 minutes so they char, then stir and cook 3 minutes more.
  5. 5Tip the corn into a bowl and add the capsicum, spring onion and roughly chopped coriander.
  6. 6Squeeze over the lime juice, add the remaining oil and salt, then toss and serve.
