Crispy Brussels Sprouts With Balsamic Honey

Halved sprouts go frilly and caramelised at the edges, then get a sweet balsamic drizzle. Even sprout sceptics tend to come back for more.

Ingredients

  • 600 gram brussels sprouts
  • 2 tablespoon olive oil
  • 2 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. 1Trim the sprout bases and cut each sprout in half through the stem.
  2. 2Toss the halves with the olive oil, salt and pepper.
  3. 3Tip them into the basket cut side down in as close to one layer as you can manage. A 5-6L basket takes 600 g in a slightly heaped layer.
  4. 4Cook at 190°C for 10 minutes.
  5. 5Shake the basket well and cook at 190°C for another 6 minutes until browned and crisp at the leaf edges.
  6. 6Whisk the balsamic vinegar with the honey and toss it through the hot sprouts.
