Crispy Brussels Sprouts With Balsamic Honey

Halved sprouts go frilly and caramelised at the edges, then get a sweet balsamic drizzle. Even sprout sceptics tend to come back for more.
Ingredients
- 600 gram brussels sprouts
- 2 tablespoon olive oil
- 2 tablespoon balsamic vinegar
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- 1Trim the sprout bases and cut each sprout in half through the stem.
- 2Toss the halves with the olive oil, salt and pepper.
- 3Tip them into the basket cut side down in as close to one layer as you can manage. A 5-6L basket takes 600 g in a slightly heaped layer.
- 4Cook at 190°C for 10 minutes.
- 5Shake the basket well and cook at 190°C for another 6 minutes until browned and crisp at the leaf edges.
- 6Whisk the balsamic vinegar with the honey and toss it through the hot sprouts.
