Blue Cheese Dressing

Thick, tangy and properly chunky with crumbled blue cheese. Made for wedges of iceberg, buffalo wings and steak salads.
Ingredients
- 100 gram blue cheese
- 125 gram sour cream
- 80 gram whole-egg mayonnaise
- 60 millilitre buttermilk
- 1/2 piece lemon
- 1/2 teaspoon worcestershire sauce
- 1/2 teaspoon cracked black pepper
Instructions
- 1Crumble the blue cheese into a bowl and mash about half of it to a paste with a fork, leaving the rest in chunks.
- 2Stir in the sour cream and mayonnaise until the mashed cheese disappears into the base.
- 3Loosen with the buttermilk, adding it a splash at a time until it is thick but pourable.
- 4Season with 2 teaspoons of lemon juice, the worcestershire sauce and plenty of black pepper.
- 5Taste before adding salt — blue cheese is already salty and most batches need none.
- 6Keep in a screw-top jar in the fridge for up to 5 days. It thickens as it sits, so loosen with a little milk before serving.
