Classic Lamington Squares

Squares of vanilla sponge dipped in chocolate icing and rolled in coconut. A true Aussie classic for cake stalls, birthdays or a weekend baking project.
Ingredients
- 125 gram butter, softened
- 3/4 cup caster sugar
- 1 teaspoon vanilla extract
- 3 piece eggs
- 1 3/4 cup self-raising flour
- 125 millilitre milk
- 3 cup icing sugar
- 1/3 cup cocoa powder
- 160 millilitre boiling water
- 2 1/2 cup desiccated coconut
Instructions
- 1Preheat the oven to 180°C. Grease and line a 20cm square cake tin with baking paper.
- 2Beat the butter, caster sugar and vanilla with electric beaters until pale, then beat in the eggs one at a time.
- 3Fold in half the flour, then half the milk. Repeat with the remaining flour and milk.
- 4Spread into the tin and bake for 30 minutes, until a skewer comes out clean. Cool completely, then cut into 16 squares.
- 5Make the icing: sift the icing sugar and cocoa into a wide bowl, then whisk in the boiling water until smooth and runny.
- 6Put the coconut in a shallow dish. Using two forks, dip one cake square in the icing, let the excess drip off, then roll it in coconut.
- 7Place on a wire rack to set. Repeat with the remaining squares.
