Cauliflower Mac and Cheese

Classic creamy mac and cheese with tender cauliflower folded through and a crunchy golden top. Sneaky vegetables, zero complaints.
Ingredients
- 300 gram macaroni
- 1/2 piece cauliflower, cut into small florets
- 50 gram butter
- 1/3 cup plain flour
- 750 millilitre milk
- 1 teaspoon dijon mustard
- 2 cup cheddar, grated
- 1/2 cup panko breadcrumbs
- 1/4 cup parmesan, grated
Instructions
- 1Preheat the oven to 200°C.
- 2Boil the macaroni and cauliflower together in salted water for 8 minutes, then drain.
- 3Melt the butter in a saucepan over medium heat, add the flour and stir for 1 minute.
- 4Gradually whisk in the milk and stir for 5 minutes until the sauce thickens.
- 5Take the pan off the heat and stir in the mustard and cheddar until melted.
- 6Combine the pasta, cauliflower and cheese sauce in a baking dish.
- 7Sprinkle with the panko and parmesan and bake for 20 minutes until golden.
