Vietnamese Nuoc Cham Dressing

The classic sweet, sour and salty Vietnamese dressing, with chilli and shredded carrot. Almost no fat and a huge amount of flavour.

Ingredients

  • 3 tablespoon fish sauce
  • 3 piece lime
  • 2 tablespoon caster sugar
  • 125 millilitre warm water
  • 2 clove garlic
  • 1 piece red chilli
  • 1/2 piece carrot

Instructions

  1. 1Dissolve the sugar in the warm water in a small bowl, stirring until the liquid is clear.
  2. 2Add the fish sauce and the juice of all three limes — about 80 millilitres.
  3. 3Finely chop the garlic and slice the chilli into thin rings, removing the seeds for a milder dressing.
  4. 4Cut the carrot into fine matchsticks and stir everything together.
  5. 5Taste — it should hit sweet, sour and salty in that order. Adjust with water if it is too fierce.
  6. 6Rest for 15 minutes before serving so the garlic and chilli infuse. Keeps in the fridge for 5 days.
