Vietnamese Nuoc Cham Dressing

The classic sweet, sour and salty Vietnamese dressing, with chilli and shredded carrot. Almost no fat and a huge amount of flavour.
Ingredients
- 3 tablespoon fish sauce
- 3 piece lime
- 2 tablespoon caster sugar
- 125 millilitre warm water
- 2 clove garlic
- 1 piece red chilli
- 1/2 piece carrot
Instructions
- 1Dissolve the sugar in the warm water in a small bowl, stirring until the liquid is clear.
- 2Add the fish sauce and the juice of all three limes — about 80 millilitres.
- 3Finely chop the garlic and slice the chilli into thin rings, removing the seeds for a milder dressing.
- 4Cut the carrot into fine matchsticks and stir everything together.
- 5Taste — it should hit sweet, sour and salty in that order. Adjust with water if it is too fierce.
- 6Rest for 15 minutes before serving so the garlic and chilli infuse. Keeps in the fridge for 5 days.
