Tuna and Corn Pasta Salad

A creamy, budget-friendly pasta salad with tuna, corn and crunchy celery. It keeps well in the fridge, making it an easy grab-and-go lunch.

Ingredients

  • 250 gram small pasta shells
  • 2 tin tuna in springwater, drained
  • 1 tin corn kernels, drained
  • 2 piece celery stalks, finely sliced
  • 1/2 cup greek yoghurt
  • 2 tablespoon mayonnaise
  • 1 tablespoon lemon juice
  • 2 tablespoon chives, snipped

Instructions

  1. 1Cook the pasta in salted boiling water until just tender, about 10 minutes. Drain and rinse under cold water.
  2. 2Stir the yoghurt, mayonnaise and lemon juice together in a large bowl.
  3. 3Add the cooled pasta, tuna, corn and celery to the bowl.
  4. 4Fold everything together gently until coated in dressing.
  5. 5Scatter with chives and serve, or chill in containers for up to 2 days.
