Slow Cooker Chicken Cacciatore Dump Pot

Chicken thighs, tinned tomatoes and olives all go in cold and come out rich and glossy. Nothing to chop, nothing to watch.

Ingredients

  • 1 kilogram chicken thigh fillets
  • 2 tin tinned diced tomatoes
  • 100 gram pitted kalamata olives
  • 1 cup frozen diced onion
  • 200 gram sliced button mushrooms
  • 2 teaspoon minced garlic
  • 2 tablespoon tomato paste
  • 2 teaspoon dried oregano
  • 1 teaspoon salt

Instructions

  1. 1Tip every ingredient straight into the slow cooker bowl.
  2. 2Stir once with a big spoon so the chicken is coated in sauce.
  3. 3Put the lid on and cook on low for 6 hours. Do not lift the lid.
  4. 4Freezer bag version: put all the raw ingredients into a large zip-lock bag, press flat and freeze for up to 3 months, then tip the frozen block into the slow cooker and cook on low for 7 hours. Leftovers keep in the fridge for 3 days or freeze in containers for 3 months; reheat in the microwave for 3 minutes, stirring halfway.
