Barbecued Salmon Fillets with Dill Butter

Salmon cooked skin side down until crisp, finished with a lemon and dill butter that melts into the flakes. Ready in twenty minutes flat.
Ingredients
- 4 piece salmon fillets
- 60 gram butter
- 1/2 bunch dill
- 1 piece lemon
- 1 tablespoon olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon cracked black pepper
Instructions
- 1Mash the softened butter with finely chopped dill, lemon zest and a pinch of the salt.
- 2Pat the salmon skin very dry, then rub the fillets with olive oil, salt and pepper.
- 3Heat the barbecue hotplate to medium-high for 5 minutes.
- 4Lay the fillets skin side down and cook for 6 minutes without touching them.
- 5Flip and cook for 3 to 4 minutes, until the flesh is opaque at the edges and still slightly pink in the very centre.
- 6Lift onto plates and put a spoonful of dill butter on each hot fillet.
- 7Squeeze over the lemon and serve straight away.
