Sweet Corn Fritters with Avocado Salsa

Crisp-edged corn fritters topped with a zingy avocado and tomato salsa. Great for dinner tonight and lunchboxes tomorrow.
Ingredients
- 2 tin corn kernels, drained
- 1 cup self-raising flour
- 2 piece eggs
- 1/3 cup milk
- 3 piece spring onion, sliced
- 1/2 cup cheddar, grated
- 2 tablespoon vegetable oil
- 2 piece avocado, diced
- 200 gram cherry tomatoes, quartered
- 1 piece lime, juiced
- 1/4 bunch coriander, chopped
Instructions
- 1Whisk the flour, eggs and milk in a large bowl to make a thick batter.
- 2Fold in the corn, spring onion, cheddar and a pinch of salt.
- 3Gently mix the avocado, tomatoes, lime juice and coriander in a separate bowl for the salsa.
- 4Heat 1 tablespoon of oil in a large frying pan over medium heat.
- 5Drop 1/4 cups of batter into the pan and cook for 3 minutes until bubbles appear on top.
- 6Flip and cook for 2 more minutes until golden, then move to a plate.
- 7Repeat with the remaining oil and batter.
- 8Serve the fritters topped with the avocado salsa.
