Sweet Corn Fritters with Avocado Salsa

Crisp-edged corn fritters topped with a zingy avocado and tomato salsa. Great for dinner tonight and lunchboxes tomorrow.

Ingredients

  • 2 tin corn kernels, drained
  • 1 cup self-raising flour
  • 2 piece eggs
  • 1/3 cup milk
  • 3 piece spring onion, sliced
  • 1/2 cup cheddar, grated
  • 2 tablespoon vegetable oil
  • 2 piece avocado, diced
  • 200 gram cherry tomatoes, quartered
  • 1 piece lime, juiced
  • 1/4 bunch coriander, chopped

Instructions

  1. 1Whisk the flour, eggs and milk in a large bowl to make a thick batter.
  2. 2Fold in the corn, spring onion, cheddar and a pinch of salt.
  3. 3Gently mix the avocado, tomatoes, lime juice and coriander in a separate bowl for the salsa.
  4. 4Heat 1 tablespoon of oil in a large frying pan over medium heat.
  5. 5Drop 1/4 cups of batter into the pan and cook for 3 minutes until bubbles appear on top.
  6. 6Flip and cook for 2 more minutes until golden, then move to a plate.
  7. 7Repeat with the remaining oil and batter.
  8. 8Serve the fritters topped with the avocado salsa.
