Sticky Peri Peri Chicken Wings

Wings that come out shatteringly crisp, then get tossed in a sticky peri peri glaze. Made for footy nights and shared plates.

Ingredients

  • 1 kilogram chicken wings
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/3 cup peri peri sauce
  • 2 tablespoon honey
  • 20 gram butter
  • 1 piece lemon

Instructions

  1. 1Pat the wings very dry with paper towel and separate them at the joint if not already split.
  2. 2Toss the wings in a bowl with the baking powder and salt until evenly dusted.
  3. 3Spread half the wings in the basket in a single layer. A 5-6L basket holds about 500 g, so cook two batches.
  4. 4Cook at 180°C for 12 minutes, shaking the basket at the 6 minute mark.
  5. 5Turn the heat up to 200°C and cook for a final 6 minutes until the skin is crackly.
  6. 6Repeat with the second batch while you warm the peri peri sauce, honey and butter in a small saucepan.
  7. 7Toss all the hot wings through the glaze and finish with a squeeze of lemon.
