Sticky Peri Peri Chicken Wings

Wings that come out shatteringly crisp, then get tossed in a sticky peri peri glaze. Made for footy nights and shared plates.
Ingredients
- 1 kilogram chicken wings
- 2 teaspoon baking powder
- 1 teaspoon salt
- 1/3 cup peri peri sauce
- 2 tablespoon honey
- 20 gram butter
- 1 piece lemon
Instructions
- 1Pat the wings very dry with paper towel and separate them at the joint if not already split.
- 2Toss the wings in a bowl with the baking powder and salt until evenly dusted.
- 3Spread half the wings in the basket in a single layer. A 5-6L basket holds about 500 g, so cook two batches.
- 4Cook at 180°C for 12 minutes, shaking the basket at the 6 minute mark.
- 5Turn the heat up to 200°C and cook for a final 6 minutes until the skin is crackly.
- 6Repeat with the second batch while you warm the peri peri sauce, honey and butter in a small saucepan.
- 7Toss all the hot wings through the glaze and finish with a squeeze of lemon.
