Satay Tofu Skewers on the Barbecue

Firm tofu skewered and grilled until golden, then coated in a creamy peanut and coconut satay. Contains peanuts. Needs 30 minutes pressing and marinating.
Ingredients
- 600 gram firm tofu
- 90 gram crunchy peanut butter
- 200 millilitre coconut milk
- 2 tablespoon soy sauce
- 1 piece lime
- 1 teaspoon brown sugar
- 2 clove garlic
- 1/2 teaspoon chilli flakes
Instructions
- 1Sit the tofu block between two plates with a tin on top and press for 20 minutes to squeeze out water.
- 2Cut the pressed tofu into 3 cm cubes and thread them onto 8 skewers.
- 3Warm the peanut butter, coconut milk, soy sauce, brown sugar, crushed garlic and chilli flakes in a saucepan for 4 minutes, stirring until smooth.
- 4Brush a third of the satay over the skewers and leave them for 10 minutes.
- 5Heat the barbecue hotplate to medium and oil it well so the tofu does not stick.
- 6Cook the skewers for 10 minutes, turning every 2 to 3 minutes, until each face is golden and firm.
- 7Spoon over the remaining warm satay and squeeze the lime across the top.
