Satay Tofu Skewers on the Barbecue

Firm tofu skewered and grilled until golden, then coated in a creamy peanut and coconut satay. Contains peanuts. Needs 30 minutes pressing and marinating.

Ingredients

  • 600 gram firm tofu
  • 90 gram crunchy peanut butter
  • 200 millilitre coconut milk
  • 2 tablespoon soy sauce
  • 1 piece lime
  • 1 teaspoon brown sugar
  • 2 clove garlic
  • 1/2 teaspoon chilli flakes

Instructions

  1. 1Sit the tofu block between two plates with a tin on top and press for 20 minutes to squeeze out water.
  2. 2Cut the pressed tofu into 3 cm cubes and thread them onto 8 skewers.
  3. 3Warm the peanut butter, coconut milk, soy sauce, brown sugar, crushed garlic and chilli flakes in a saucepan for 4 minutes, stirring until smooth.
  4. 4Brush a third of the satay over the skewers and leave them for 10 minutes.
  5. 5Heat the barbecue hotplate to medium and oil it well so the tofu does not stick.
  6. 6Cook the skewers for 10 minutes, turning every 2 to 3 minutes, until each face is golden and firm.
  7. 7Spoon over the remaining warm satay and squeeze the lime across the top.
