Crunchy Panko Salmon Bites With Lemon Mayo

Chunks of salmon in a crisp panko coat, ready in under fifteen minutes of cooking. The lemony mayo takes one minute to stir together.
Ingredients
- 600 gram salmon fillets
- 1 cup panko breadcrumbs
- 2 piece eggs
- 1/3 cup plain flour
- 1 tablespoon olive oil spray
- 1/2 cup whole egg mayonnaise
- 1 piece lemon
- 1 teaspoon salt
Instructions
- 1Cut the salmon into 4 cm chunks and remove any skin.
- 2Set out three bowls: flour mixed with salt, beaten eggs, and panko breadcrumbs.
- 3Roll each salmon chunk through the flour, then the egg, then the panko, pressing the crumbs on firmly.
- 4Spray the coated bites with olive oil and lay half of them in the basket without touching. A 5-6L basket takes about half the batch, so cook two rounds.
- 5Cook at 200°C for 4 minutes, then turn each bite with tongs and cook for another 2 minutes until deep golden.
- 6Repeat with the second batch while the first rests on a plate.
- 7Stir the mayonnaise with the juice and zest of the lemon and serve alongside.
