All-Purpose Muffin Base Mix

A big jar of sweet muffin base you can turn into berry, banana or choc-chip muffins in minutes. Scoop, add the wet ingredients and bake.

Ingredients

  • 750 gram self-raising flour
  • 250 gram caster sugar
  • 2 teaspoon baking powder
  • 50 gram full cream milk powder
  • 1 teaspoon salt

Instructions

  1. 1Sift the self-raising flour and baking powder into a very large bowl.
  2. 2Whisk in the caster sugar, milk powder and salt until evenly combined.
  3. 3Spoon the mix into a 2 litre jar and press down lightly to fit it all in.
  4. 4Label the jar with the date and the to-use amounts below.
  5. 5TO USE: whisk 500 g of mix with 2 eggs, 250 ml milk and 100 ml vegetable oil, then fold through 1 cup of berries or choc chips. Spoon into 12 lined muffin holes and bake at 180°C for 20 minutes.
  6. 6Store in an airtight jar in a cool dark cupboard for up to 3 months.
