Slow Cooker Beef Massaman Curry

Melt-in-the-mouth beef and potatoes in a mild, gently spiced coconut sauce. Set it in the morning and dinner cooks itself.

Ingredients

  • 1.2 kilogram chuck steak, cut into 4 cm cubes
  • 4 tablespoon massaman curry paste
  • 400 millilitre coconut milk
  • 250 millilitre beef stock
  • 600 gram potatoes, peeled and halved
  • 1 piece brown onion, cut into wedges
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1/2 cup roasted peanuts
  • 2 cup jasmine rice
  • 1/2 bunch coriander leaves

Instructions

  1. 1Put the beef, curry paste, coconut milk and stock in the slow cooker. Stir until the paste is mixed through.
  2. 2Add the potatoes and onion wedges. Push them under the liquid.
  3. 3Put the lid on and cook on LOW for 8 hours.
  4. 4Twenty minutes before serving, cook the jasmine rice following the packet directions.
  5. 5Stir the fish sauce and brown sugar into the curry. Taste and add more of either if needed.
  6. 6Serve the curry over rice. Scatter with peanuts and coriander leaves.
