Slow Cooker Beef Massaman Curry

Melt-in-the-mouth beef and potatoes in a mild, gently spiced coconut sauce. Set it in the morning and dinner cooks itself.
Ingredients
- 1.2 kilogram chuck steak, cut into 4 cm cubes
- 4 tablespoon massaman curry paste
- 400 millilitre coconut milk
- 250 millilitre beef stock
- 600 gram potatoes, peeled and halved
- 1 piece brown onion, cut into wedges
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1/2 cup roasted peanuts
- 2 cup jasmine rice
- 1/2 bunch coriander leaves
Instructions
- 1Put the beef, curry paste, coconut milk and stock in the slow cooker. Stir until the paste is mixed through.
- 2Add the potatoes and onion wedges. Push them under the liquid.
- 3Put the lid on and cook on LOW for 8 hours.
- 4Twenty minutes before serving, cook the jasmine rice following the packet directions.
- 5Stir the fish sauce and brown sugar into the curry. Taste and add more of either if needed.
- 6Serve the curry over rice. Scatter with peanuts and coriander leaves.
