Soy, Lime and Chilli Dressing

Salty, sour and hot, with coriander through it. Three minutes in a jar and it lifts rice salads, cold noodles and grilled beef.
Ingredients
- 3 tablespoon soy sauce
- 2 piece lime
- 2 tablespoon sesame oil
- 2 teaspoon brown sugar
- 1 piece red chilli
- 2 tablespoon coriander
Instructions
- 1Juice both limes into a screw-top jar — you are after about 60 millilitres.
- 2Add the soy sauce and brown sugar and shake until the sugar has dissolved.
- 3Finely slice the chilli and chop the coriander, stalks and all.
- 4Add them to the jar with the sesame oil and shake hard for 20 seconds.
- 5Taste and add a little water if the soy makes it too salty for you.
- 6Best within 3 days while the coriander is still fresh. Use tamari instead of soy to make it gluten free.
