Banana Choc-Chip Muffins

Soft, fluffy muffins that use up spotty bananas and hide pockets of melty chocolate. One bowl, no beaters, done in half an hour.
Ingredients
- 3 piece ripe bananas
- 2/3 cup brown sugar
- 1 piece egg
- 80 millilitre vegetable oil
- 80 millilitre milk
- 1 teaspoon vanilla extract
- 2 cup self-raising flour
- 3/4 cup dark chocolate chips
Instructions
- 1Preheat the oven to 190°C and line a 12-hole muffin tin with paper cases.
- 2Mash the bananas in a large bowl until mostly smooth.
- 3Whisk in the brown sugar, egg, oil, milk and vanilla.
- 4Add the flour and chocolate chips and fold until only just combined — a few floury streaks are fine.
- 5Divide the batter between the 12 cases.
- 6Bake for 20 minutes, until risen and a skewer comes out clean.
- 7Cool in the tin for 5 minutes, then transfer to a wire rack.
