Banana Choc-Chip Muffins

Soft, fluffy muffins that use up spotty bananas and hide pockets of melty chocolate. One bowl, no beaters, done in half an hour.

Ingredients

  • 3 piece ripe bananas
  • 2/3 cup brown sugar
  • 1 piece egg
  • 80 millilitre vegetable oil
  • 80 millilitre milk
  • 1 teaspoon vanilla extract
  • 2 cup self-raising flour
  • 3/4 cup dark chocolate chips

Instructions

  1. 1Preheat the oven to 190°C and line a 12-hole muffin tin with paper cases.
  2. 2Mash the bananas in a large bowl until mostly smooth.
  3. 3Whisk in the brown sugar, egg, oil, milk and vanilla.
  4. 4Add the flour and chocolate chips and fold until only just combined — a few floury streaks are fine.
  5. 5Divide the batter between the 12 cases.
  6. 6Bake for 20 minutes, until risen and a skewer comes out clean.
  7. 7Cool in the tin for 5 minutes, then transfer to a wire rack.
