Light-as-air vanilla cupcakes with a simple, swirlable vanilla buttercream. The reliable base for every birthday and bake sale.
Ingredients
- 125 gram butter, softened
- 3/4 cup caster sugar
- 2 teaspoon vanilla extract
- 2 piece eggs
- 1 1/2 cup self-raising flour
- 125 millilitre milk
- 125 gram extra butter, softened
- 2 cup icing sugar
- 1 tablespoon extra milk
Instructions
- 1Preheat the oven to 180°C and line a 12-hole muffin tin with paper cases.
- 2Beat the butter, caster sugar and 1 teaspoon of vanilla with electric beaters until pale and fluffy.
- 3Beat in the eggs one at a time.
- 4Fold in half the flour, then half the milk. Repeat with the rest.
- 5Divide the batter between the cases and bake for 18 minutes, until the tops spring back when lightly pressed.
- 6Cool completely on a wire rack.
- 7Beat the extra butter until pale, then gradually beat in the icing sugar, extra milk and remaining vanilla until fluffy.
- 8Swirl or pipe the buttercream onto the cooled cupcakes.
