Lemon Tuna and Olive Pasta

A bright pantry pasta with tinned tuna, olives, capers and lemon. Cheap, fast and much more delicious than it has any right to be.

Ingredients

  • 400 gram spaghetti
  • 2 tin tuna in olive oil
  • 1/2 cup pitted kalamata olives
  • 2 tablespoon capers
  • 3 clove garlic
  • 1/4 teaspoon dried chilli flakes
  • 1 piece lemon
  • 1/2 bunch flat-leaf parsley
  • 2 tablespoon olive oil

Instructions

  1. 1Cook the spaghetti in a large pot of salted boiling water for the time on the packet. Reserve half a cup of pasta water, then drain.
  2. 2While the pasta cooks, slice the garlic, halve the olives, chop the parsley and zest the lemon.
  3. 3Heat the olive oil in a large frying pan over medium heat. Cook the garlic, chilli flakes and capers for 2 minutes until fragrant.
  4. 4Add the drained tuna and olives. Stir gently for 1 minute, keeping the tuna in chunks.
  5. 5Add the drained pasta, lemon zest, lemon juice and a splash of pasta water. Toss for 1 minute.
  6. 6Toss through the parsley, taste, add pepper, and serve.
