Golden Fish Fingers With Quick Tartare

Homemade fish fingers with a crunchy crumb and a five-ingredient tartare sauce. Far better than the freezer version and just as fast.
Ingredients
- 600 gram white fish fillets
- 1 cup dried breadcrumbs
- 1/3 cup plain flour
- 2 piece eggs
- 1 tablespoon olive oil spray
- 1/2 cup whole egg mayonnaise
- 2 piece gherkins
- 1 piece lemon
- 1 teaspoon salt
Instructions
- 1Slice the fish into finger-sized strips about 3 cm wide.
- 2Set up three bowls: flour with salt, beaten eggs, and breadcrumbs.
- 3Coat each strip in flour, then egg, then breadcrumbs, pressing the crumbs on well.
- 4Spray the fingers with oil and lay half in the basket in a single layer. A 5-6L basket takes about 6 fingers at once, so cook two batches.
- 5Cook at 200°C for 5 minutes, then turn each finger over with tongs.
- 6Cook at 200°C for another 2 minutes until crisp and golden, then repeat with the second batch.
- 7Finely chop the gherkins and stir them into the mayonnaise with a squeeze of lemon to make the tartare.
