Tandoori-Style Yoghurt Chicken Thighs

Chicken thighs sit in a spiced yoghurt marinade that keeps them tender and gives a gorgeous charred crust. Needs 3 hours marinating.
Ingredients
- 800 gram chicken thigh fillets
- 200 gram greek yoghurt
- 2 teaspoon ground cumin
- 2 teaspoon sweet paprika
- 1 teaspoon garam masala
- 3 clove garlic
- 2 teaspoon ginger
- 1 piece lemon
Instructions
- 1Stir the yoghurt, cumin, paprika, garam masala, crushed garlic, grated ginger and lemon juice together in a large bowl.
- 2Slash each chicken thigh twice with a knife so the marinade gets in.
- 3Turn the chicken through the yoghurt, cover, and refrigerate for 3 hours.
- 4Heat the barbecue to medium and wipe the grill bars with oil.
- 5Shake the excess marinade off each thigh and lay them flat on the bars.
- 6Grill for 10 minutes, then turn and grill for another 10 minutes, until deeply coloured with dark charred edges.
- 7Check the thickest thigh reads 75°C, or cut it open and look for white flesh and clear juices.
- 8Rest the chicken on a warm plate for 5 minutes before serving.
